Documentación de los procesos de producción en las áreas de molinería y galletería en la empresa Segalco S.A.S. /

Abstract

El presente trabajo se lleva a cabo en la empresa SEGALCO S.A.S. Organización dedicada principalmente al sector alimentario; se encamina básicamente en la elaboración de los procedimientos operativos estándar (POE) de los procesos productivos derivados de la molinería y la galletería. Como resultado de la elaboración de los POE, se tiene la conformación de la documentación de los procesos, los registros e instructivos que intervienen en el proceso de producción de las diferentes actividades derivadas de las áreas de molinería y galletería. Esta documentación sirve también como modelo para el desarrollo de otros productos diseñados por la empresa, con el propósito de ir avanzando en la búsqueda de la certificación de calidad de la organización. El desarrollo del trabajo cuenta con diferentes etapas. En la primera etapa se realiza un diagnóstico de las condiciones iniciales de la documentación que hacen parte de los diferentes procesos productivos. En esta etapa se determina tanto la documentación existente, como también los tipos de documentos necesarios y que deben existir en cada proceso productivo para que se lleven a cabo bajo condiciones controladas. En la segunda etapa se realiza la documentación de los procesos, etapa que se desarrolla mediante dos fases; la primera es mediante el estudio de los lineamientos y parámetros requeridos por el sector específico en el cual se desenvuelve la empresa como lo plantea la norma ISO 9001:2008 y GTC-ISO/TR 10013. En la segunda fase se lleva a cabo el diseño y elaboración de los documentos necesarios para los procesos productivos. El objetivo es establecer todos los elementos generales necesarios para la elaboración del sistema documental del proceso de producción. Finalmente se socializa la documentación en la empresa, con el fin de revisar y aprobar los documentos elaborados.

This work is conducted in the company SEGALCO S.A.S. organization dedicated mainly to the food industry; basically is heading in the elaboration of the standard operating procedures (SOP´s) of processes derived from the grain milling and the biscuits. As result of the development of the SOP’s, it is the formation of the documentation of the processes, records and instructions involved in the production process of the different activities derived from the grain milling and biscuits areas. This documentation also serves as a model for the development of other products designed by the company, with the purpose to advance in the search for the quality certification of the company. The development work has different stages. The first stage is carried out a diagnosis of the initial conditions of the documentation that are part of different production processes. At this stage determines both the existing documentation, as also the types of documents required and which must exist in each production process so that they are carried out under controlled conditions. In the second stage is the documentation of the processes, stage which develops through two phases; the first is through the study of the guidelines and parameters required by the specific sector in which it operates the company as the standard ISO 9001:2008 and GTC-ISO/TR 10013 puts it. In the second phase is conducted the design and preparation of necessary documents for production processes. The objective is to establish all the necessary general elements for the elaboration of the documentary system of the production process. Finally you socialize documentation in the company, in order to review and approve the documents produced.
